ODIA GHANTA TARKARI/ CURRY

Ingredients:

  1. Soaked Yellow matar 1 cup
  2. Soaked kabuli channa ½ cup
  3. Sprouted moong and kala channa 1 cup
  4. Chopped mixed vegetables (yam, ripe cucumber, banana, potato, brinjal, radish, simba, long beans, pumpkin, arbi, parwal, spiny gourd (1 no. each)
  5. Chopped Tomato 2 nos.
  6. Salt as needed
  7. Turmeric 1 tbsp
  8. Chopped ginger 1/2 inch
  9. Tejpatta 2 nos
  10. Cumin seeds 2 tbsp
  11. Red chillies 2 nos.
  12. Roasted cumin and chilli powder 3 tbsp
  13. Black pepper powder 1 tsp
  14. Ghee 4 tbsp
  15. Grated coconut and chopped coriander leaves

Method:

  1. Fiirst boil the yellow matar and kabuli channa and keep aside.
  2. Now in a pressure cooker add all the chopped vegetables with tomato, boiled chick peas/kabuli chana, yellow matar, grated ginger , bayleaves, salt and turmeric. Close the lid and pressure cook for only one whistle.
  3. After one whistle let the pressure cooker be cooled. After its been cool down open the pressure cooker lid .Now prepare for seasoning. In a pan heat ghee add cumin seeds and red chillies and wait till cumin crackle, now pour this seasoning onto the ghanta curry which is in the pressure cooker. Cover the lid immediately so that the essence is spread all over the curry inside the cooker.
  4. After 5 mins remove lid add roasted cumin and red chilli powder, black pepper powder, grated coconut and coriander leaves and mix well. Serve hot with rice/ roti.
