ALOO MATAR POHA
INGREDIENTS:
- Chopped in small cubes Aloo/ Potato 1 big no.
- Frozen peas 1 cup
- Chopped carrots in small cubes 1/2 cup
- Chopped onion in small cubes 1 no
- Grated ginger 1/2 inch
- Fried peanuts 3 tbsp
- Chopped greem chillies 2 nos.
- Flattened rice/ poha 3 cups
- Milk 1/2 cup
- Sugar 1 tbsp
- Salt as per taste / 1 tsp and turmeric 1/2 tsp
- Mustard seeds 1 tsp
- Cumin seeds 1 tsp
- Lemon juice 1 tsp
- Oil for cooking
METHOD:
- First clean thick flattened rice using water then discard the water. Then add milk and let poha/ flattened rice soak the milk and keep aside.
- Now in a pan add oil, add mustard seeds, cumin seeds, green chillies and let it crackle. Now add chopped onions, grated ginger and fry for 3 mins. now add the chopped carrots, potatoes ,frozen peas, salt and turmeric and fry for about 4 mins.
- Now cover it and cook till vegetables are done.
- After vegetables are done add flattened rice, fried peanuts, sugar and mix well and cook for more about 3 mins in medium flame. Now add lemon juice and mix well and turn off the gas.
- Serve hot the poha with any vegetable curry of your choice.
