ALOO MATAR POHA

INGREDIENTS:

  1. Chopped in small cubes Aloo/ Potato 1 big no.
  2. Frozen peas 1 cup
  3. Chopped carrots in small cubes 1/2 cup
  4. Chopped onion in small cubes 1 no
  5. Grated ginger 1/2 inch
  6. Fried peanuts 3 tbsp
  7. Chopped greem chillies 2 nos.
  8. Flattened rice/ poha 3 cups
  9. Milk 1/2 cup
  10. Sugar 1 tbsp
  11. Salt as per taste / 1 tsp and turmeric 1/2 tsp
  12. Mustard seeds 1 tsp
  13. Cumin seeds 1 tsp
  14. Lemon juice 1 tsp
  15. Oil for cooking

METHOD:

  1. First clean thick flattened rice using water then discard the water. Then add milk and let poha/ flattened rice soak the milk and keep aside.
  2. Now in a pan add oil, add mustard seeds, cumin seeds, green chillies and let it crackle. Now add chopped onions, grated ginger and fry for 3 mins. now add the chopped carrots, potatoes ,frozen peas, salt and turmeric and fry for about 4 mins.
  3. Now cover it and cook till vegetables are done.
  4. After vegetables are done add flattened rice, fried peanuts, sugar and mix well and cook for more about 3 mins in medium flame. Now add lemon juice and mix well and turn off the gas.
  5. Serve hot the poha with any vegetable curry of your choice.
