CHEESY KEEMA MASALA CREPE
It’s an Indo- French fusion recipe with my twist…..The twist is mostly crepe is mixed with berries and whipped creams for a sweeter version…and I have tried to give a twist by making it with a bit Indian masala version….
Indegredients :
For Keema masala :
1. Chicken keema 250 gm
2. Finely chopped onions 2 nos.
3. Finely chopped tomato 1 no.
4. Ginger garlic paste 2 tbsp
5. Chicken masala powder 1 tbsp
6. Chilli powder 1 tsp
7. Garam masala 1 tsp
8. Chopped coriander
9. Salt and turmeric as required
10. Oil 4 tbsp for cooking
For White sauce :
1. Chopped garlic 2 tbsp
2. Maida 2 tbsp
3. 2 cups milk
4. Butter 1 tbsp
5. Pinch salt as needes
For Crepe :
1. Butter 3 tbsp
2. Maida 2 cups
3. Egg 2 nos.
4. Milk 1 cup
5. Water 1 cup
6. Honey 1 tbsp
7. Cinnamon powder 1 tsp
8. Vanilla 1 tsp
9. Salt as per taste
Rest ingredients
1. Cheese slices 4 nos.
2. Grated cheese 2 cubes
3. Chilli flakes 2 tbsp
4. Oregano 1 tbsp
5. Chopped coriander leaves
METHOD :
First make chicken keema masala
1. Warm oil in a kadai, add chopped onions and fry for 2 mins. Then add ginger garlic paste and once again fry for 2 mins , now add chopped tomatoes and fry till tomato softens, add salt and turmeric and fry once more for 3 mins.
2. Now add chicken masala, chilli powder, chicken keema and fry for 5 mins. Now cook covered till chicken is done.
3. Now uncover chicken and add garam masala and chopped coriander leaves and mix well and keep aside.
Now prepare the crepes :
1. Mix all the ingredients mentioned under crepe section and prepare a crepe mixture.
2. Now heat a non stick pan, now add a laddle full of crepe mixture and make a thin round shape. Cook in a medium flame. Flip and cook the other side. Now remove the crepe and keep in a plate.
3. Do likewise with the rest.
Now prepare the white sauce :
1. In a pan add butter, add chopped garlic and fry for 2 mins, now add maida and fry for another 2 mins, now add milk and mix well. Cook till sauce thickens. Remove from pan and keep aside.
Now finally the assembling part:
1. In a plate take one crepe, top up with one cheese slice at a corner end of crepe,  now top up the slice with chicken keema.
2. First fold the side parts of crepe and roll it and form a roll.
3. Do likewise with the rest crepes.
4. Now in a baking tray, spread aluminium foil and upon it arrange the crepe rolls, Now spread white sauce over it, now add some grated cheese over it, then sprinkle some chilli flakes, coriander leaves and oregano over it and then bake it in a preheated oven for about 10- 15 mins in 180 degrees.
Finally Indo- French Crepe is done.
Remove and cut into slices and serve hot.
